No-Flour Pizza Bites

These no-flour pizza bites are one of those recipes that are almost ridiculously easy — but they’re so good! They use just a few simple ingredients and bake right in a muffin tin to create little crispy, cheesy pizza bites without any flour or dough.

I made these with salami, but you can use pepperoni instead. Line the muffin tin, add cheese and a dollop of tomato sauce, top with more cheese, and bake. That’s it!

They’re perfect for a quick snack, easy appetizer, party food, or a simple low-carb lunch.

The recipe makes 12 pizza bites and uses:

  • 24 slices salami or pepperoni
  • About 1 cup shredded mozzarella cheese
  • About ½ cup prepared tomato sauce
  • Italian seasoning, optional

Ingredients

  • 24 slices Salami or Pepperoni
  • 1 cup Shredded Mozzarella or other Pizza Cheese
  • 1/2 cup Prepared Tomato Sauce

Instructions

  • Preheat the Oven: Preheat your oven to 350°F.
  • Line the Muffin Tin: Place one slice of salami or pepperoni into each cup of a 12-cup muffin tin. Press the slices down and gently up the sides to create little cups.
  • Add the Cheese: Add a small amount of shredded mozzarella to the bottom of each meat cup.
  • Add the Tomato Sauce: Spoon a small dollop of prepared tomato sauce over the cheese.
  • Top with More Cheese: Add another layer of shredded mozzarella over the tomato sauce.
  • Bake: Bake at 350°F for about 10 minutes, or until the cheese is melted and bubbly and the edges of the salami or pepperoni are crisp.
  • Cool and Serve: Let the pizza bites cool for a couple of minutes before carefully removing them from the muffin tin. Serve warm.

Equipment Used

For this recipe, you only need a standard 12-cup muffin tin (available on Amazon.com), a spoon, and an oven.

Variations & Substitutions

  • Salami or Pepperoni: I used salami, but pepperoni works just as well. Choose whichever you prefer or happen to have on hand.
  • Cheese: Mozzarella gives these pizza bites that classic melty pizza flavor, but you can experiment with an Italian cheese blend, provolone, or another good melting cheese.
  • Tomato Sauce: I use prepared tomato sauce because that’s what I had on hand. You can use your favorite prepared tomato sauce. Since different sauces vary in sweetness and carbohydrate content, check the label if you’re tracking carbs.
  • Seasonings: Italian seasoning is optional. You can also add garlic powder, oregano, basil, or red pepper flakes.
  • Toppings: Want to make these more like your favorite pizza? Add a small amount of cooked mushroom, onion, bell pepper, olives, or other toppings. Just be careful not to overfill the muffin cups.
  • Make Them Spicy: Add crushed red pepper flakes or a few sliced jalapeños for some extra heat.

Nutritional Info

Nutritional information will vary depending on whether you use salami or pepperoni, the type and amount of cheese used, and the tomato sauce you choose.

Because the ingredients are so simple, check the labels on the specific products you use if you’re tracking carbohydrates, calories, or other macros.

Why This Recipe Works

No-Flour pizza bites take everything you love about pizza and skip the flour and dough completely.

The salami or pepperoni creates a crispy, flavorful cup that holds the melted cheese and tomato sauce. The cheese melts around the sauce, creating a gooey center with crispy edges.

There’s no dough to mix, no rolling, and no complicated preparation. Just layer the ingredients in a muffin tin and bake. If you like easy, make-ahead bites like these, try my egg bites for breakfast.

They’re also easy to customize, which makes them a great recipe to keep in your back pocket when you want something quick and pizza-flavored without making an entire pizza.

Diet Notes

These pizza bites are naturally low-carb and flour-free, making them a simple option for people who are reducing their carbohydrate intake or avoiding flour.

They can also be gluten-free when made with ingredients that are certified gluten-free. If you need to avoid gluten, check ingredient labels carefully, since processed meats and prepared sauces can contain unexpected ingredients. The FDA’s gluten-free labeling guidance can help you understand what the “gluten-free” label means.

Keep in mind that tomato sauce can contain added sugar, so check the nutrition label if you’re closely monitoring carbohydrates.

FAQ: Frequently Asked Questions

How many pizza bites does this recipe make?

This recipe makes 12 pizza bites using a standard 12-cup muffin tin.

Are these pizza bites low-carb?

Yes. There’s no flour or dough, just salami or pepperoni, cheese, and tomato sauce. Most of the carbs come from the sauce, so check the label, since some brands add sugar.

Can I use pepperoni instead of salami?

Absolutely! Pepperoni works beautifully in this recipe. I used salami, but either one makes a delicious crispy cup for the cheese and tomato sauce.

Can I use pizza sauce instead of tomato sauce?

Yes, but I call for tomato sauce because that’s what I used in the recipe. Use whatever prepared tomato sauce you enjoy.

Can I add other pizza toppings?

Yes. Low-carb toppings like pepperoni, Italian sausage, mushrooms, olives, bell peppers, or a little onion all work well. Just keep in mind that extra toppings will change the nutrition information.

Are these pizza bites gluten-free?

The basic recipe does not contain flour, but ingredients such as processed meats and prepared sauces can vary. Check the labels if you need to follow a strict gluten-free diet.

Can I make these ahead of time?

Yes. You can bake the pizza bites ahead of time and reheat them when you’re ready to serve. They’re also great for meal prep or packing as a snack.
